Out of the movies you mentioned I only saw Spirited Away once years ago and a little bit of Castle in the Sky though I do plan to see them some time. Also you should see Sword of the Stranger. It's definitely not like the series made today as it has an amazing story, awesome combat, badass characters, and great animations. In fact I would go as far to say that the final sword fight at the end between Rarou and Nanashi is not only Balls to the Wall Hella ****in Awesome!(which is the highest level of awesome there is) but could very well be the greatest anime fight of all time. Or at least the greatest anime swordfight. There's no "super powerups" special attacks, flashing lights or big explosions. It's just beautiful animations and straight up fighting which is mostly realistic and most of the combat moves are actual moves that could be used in real life. I haven't seen any anime sword fights that great since Samurai Champloo which is another great anime with beautiful animation and a good story.

I do watch and read some of the "big ones" such as Naruto, Bleach, and One Piece though now it's mostly just because I started way back when they were fairly young in the US and before the quality has really degraded. Now I mostly see them just to see how it all ends.

Another good series to get into is Berserk if you're not squemish. The anime series is only one season long but the manga is ongoing and really badass. Lots of fighting, monsters, demons and blood and gore. Also a new set of movies is being released this year with the first one covering most of the first season being released in July.
