The reason templars choose Mace/Shield is because Maces, unlike Swords offer a decent amount of Magic Boost, which they need for their Magic Smash (deals magic damage, Ferocious Strike chain, stigma). They use their greatsword only when they're on the offensive and want to deal as much damage as possible, as well as to get the most out of their damage buffs (e.g. Empyrean Fury). From there you can go for either a high-damage Greatsword (such as Arbiter's) fused with a top-tier PvE one (mythic ones for example) or an Extendable Greatsword (currently the best obtainable is Distorted Dragon Lord's Greatsword), fused with a PvP weapon (the downside is that the DDL Greatsword's level is 60 and thus cannot be fused with any better PvP weapon than Shedim Herald's / HAC). Some people choose to go for an Extendable Mace, giving up sheer damage for some extra kiting ability.

As for manastones, the most used builds are MR/Crit and Accuracy/Crit, as niwangkig said. Some more experienced templars have more than one set, a secondary Block-stacked one for example. (note: it is usually not a good idea to stack Attack +5 as it's suboptimal and not as useful as other stats)

    Hope I helped.

Crit/mr or Macc/crit or Crit/ma but i will suggest you go for some MR/MA/CRIT stats..

EDIT: (forgot to put) i recommend you got for extend mace(u can shield counter enemy from 5m :D) + extend gs since there are alot of times where after shield burst/swordstorm the enemy will bounce out or idk how you call that but on many occasions you cant get to hit the Bp on them bcoz the bounce out after your skills for stumble. as for the arbiter you can either go for mythic gs that drops from DLR boss or tiamat maybe, the lvl 65 pve weaps are still not available(i mean the instance)

Crit/Block on boots and Pants, Macc/Crit on Shoulders, Crit/Macc on Gloves, the rest Crit/Acc and if you reach 900+ Crit put in the missing slots Macc/Crit.

Still depends on you on what you used to play.. you can go crit/block with full def + attack for melees or without magic attacks such sin, glad and rangers, then you can go with crit/mr to get rid of magic attacks from sm,sorc, bard, gunners, chant, clerics or you can go with full mr and it will depends on your tactics. My current build is crit/accu cause i prefer full damage temp since temps has alot of def buffs already.

I have 3 main sets i use on my templar, 1 is pretty similar to what momo said except i socket slightly more accu with all the extra block out there now... and my second is crit/ mr (personally i think this is the best) ...and third is just for single gear switch-outs they each have different stones.
Also if you didnt know...1h swords are amazing on templars....7 attack speed with as much burst as a greatsword...dont beleive me try it out...non extendable 1h pvp swords hit harder than 2h greatswords.
