http://aion.mouseclic.com/tool/gearcalc/10471, click compare to see stat differences (I used standard manastones)

You can't really see the range anywhere. For melee attacks it's 3~4m for non-extend and about 7m for extend. For (some?) skills with specific range in their tooltip just add 4m when you're using an extendable.

Custodian would be an overall better choice because each part of the set has 6 manastone slots compared to 5 of each part of the Fierce set which means you gain / lose 5 manastone slots. Also, 1 out of the 5 manastone slots of the Fierce set is ancient manastone slot which means you cannot put dual stat manastone on it.

As for the greatsword range, it will depend whether it is extendable greatsword or non-extendable. Extendable greatsword can hit up to 7m while non-extendable can hit up to 2m however, as Razor mentioned there are a few exceptions that varies from the skills you may use. Generally, it is those melee skills that are ranged skills such as Cleave, Mocking Blast, Aether Leash, Illusion Chains etc and melee cast skills such as Shieldburst and Sword Storm.
