soft capped at 440 and hard capped until 750 but no visual cap.

600 should be the max crit i think, since anything more than 440 is devided 2, but thats from retail which i've read. i can't confirm it here.

but i've reach about 770 crit with crit buff/food/scroll, on pve gear that was before 2.5 and i've been dishing out crits about 70 percent of the regular attacks at 2.9k max on mobs, and that's different in pvp.

in pvp it should be around 300 something or less, because of strike resist.

I have no idea..I have 680 crit on my sin and 540 on my ranger. I dont use crit food. Works fine..
